Tongue is such an underrated cut. It lacks the organy flavor of the more popular offal pieces and makes a wonderfully tender shredded meat. Classic tacos de lengua or shredded BBQ beef would be two perfect dishes for this meat! Average weight: 1.5-2 lbs
